郑逸梅,女,中共党员,工学博士,讲师,福建龙岩人。毕业于福建农林大学食品科学与工程专业,获工学博士学位。
主要研究方向包括食品功能因子载运体系的设计与健康调控、蛋白质改性及其结构与功能性质、天然小分子功能因子的吸收与稳定递送等相关研究。迄今已在国内外学术期刊发表论文19篇,其中以第一作者身份在Food Chemistry、Ultrasonics Sonochemistry、International Journal of Biological Macromolecules、LWT-Food Science and Technology、Journal of Functional Foods等权威期刊发表论文6篇。近年来,参与多项国家级、省部级及市级科研项目。
目前主要承担《营养学基础》、《无机及分析化学》等课程的教学工作。
